Cod in coconutsauce

(5-6pers)

ingredients:

A little butter for frying

1-2 freshly large cod fillets, or 3 blocks frozen cod

2 red peppers in cubes

2 onions, chopped

2 red chili, finely chopped

Asparagus beans (I used a pack of frozen which I gave a quick boil) about 3-400 g

2 cans of coconut milk

A doze of cream

4 garlic boats, finely chopped

4cm ginger, finely chopped

The juice of a lime

Salt

Parmesan for topping

Put the oven on 200 degrees celcius, hot air.

Take chopped onions, peppers, garlic, chili, ginger and swirl it together in a large pot until the onion is shiny. Pour coconut milk and cream in, add the asparagus beans (haricot verts) that you have cut a little, they tend to be a little long, have lime juice and salt, mix together.

Pour the mixture into a large greased baking pan. Cut the fish into portion pieces, put the pieces into the coconut mixture in the pan. Sprinkle with plenty of grated parmesan or similar cheese and cook for 30 minutes.

Served with rice and foccacao bread

Or with boiled cauliflower for low-carb eaters

Ingredienser:

Meierismør å steke i

1-2 ferske skreifileter, el 3 pk frossen torsk

2 røde paprika i terninger

2 løk, hakket

2 røde chili, finhakket

Aspargesbønner (jeg brukte en pakke med frosne som jeg ga et raskt oppkok)ca 3-400 g

2 bokser kokosmelk

En dæsj fløte

4 hvitløksbåter, finhakket

4cm ingefær, finhakket

Saften av en lime

Salt

Parmesan til topping

Sett ovnen på 200 grader varmluft.

Ta hakket løk, paprika, hvitløk, chili, ingefær og surr det sammen i en stor gryte til løken er blank. Hell kokosmelk og fløte oppi, tilsett aspargesbønner (haricot verts) som du har kuttet litt, de pleier å være litt lange, ha oppi limesaft og salt, bland sammen .

Hell blandingen i en stor smurt ildfast form. Skjær fisken i posjonsbiter, putt bitene inn i kokosblandingen i formen. Strø over rikelig med revet parmesan eller lignende ost, og stek i 30 min.

Serveres med ris og foccaciabrød

Eller med kokt blomkål for lavkarbo-spisere
