Taco-Friday

In Norway Taco Friday is a well known expression, as many have adopted this nice Mexiacan dish, especially on Fridays! I make tortillas for my family, and I have tried different options for myself . My favorite LCHF “Taco shell” is simply grated cheese, melted in the oven! Jamaican jerk taco is a hit in the house. Here is how I make it:

Ingredients:
Chicken breast, cut in small cubes
2 avocados
Ruccola salad
Grated cheese
Sour cream
Mango sauce (Santa Maria) It contains 16g carbs/100g, just take som drops on your taco…it tastes so good!
Jamaican Jerk spice mix (Santa Maria) – or make a low carb spice mix yourself:
Allspice ca.30%, Chilipepper ca.15%, garlic, black pepper, cumin, turmeric, bay leaf, salt, onion and thyme
Coconut/ Black Pepper tortillas (Santa Maria) for the carb-eaters

Fry the chicken cubes and stir in the Jamaican jerk spices .

Cut the avocado in cubes, fill the tortillas with meat, ruccola, avocado, grated cheese, sour cream and mango sause.

Cheese taco shells: Grate some of your favorite cheese on baking paper, cook it for ca 5 min in the oven 180 degrees Celcius until it is melted ( don’t burn it!) Cool them a little, and then you can bend them as taco-shells. Yummy!

Min favoritt-taco for tiden er Jamaican Jerk Taco, og jeg har funnet ut at smeltet ost er de beste tacoskjellene ! Jeg har prøvd å bake lavkarbotortilla, men jeg er ikke så veldig fornøyd med resultatet. Ost derimot, er helt konge.

ingredienser: 
Kyllingbryst, kutt i små terninger
2 avokadoer
Ruccola salat
Revet ost
Rømme
Mango saus (Santa Maria) Den inneholder 16g karbohydrater / 100g, bare ta noen dråper ... det smaker så bra!
Jamaican Jerk Spice Mix (Santa Maria) - eller lag en krydderblanding selv: Allehånde ca 30%, Chilipepper ca.15%, hvitløk, sort pepper, spidskommen, gurkemeie, løvblad, salt, løk og timian
Kokosnøtt / Sort pepper tortillas (Santa Maria) for karbo-eterne

Stek kyllingterningene og bland inn krydderblandingen.
Kutt avokadoen i terninger og legg kjøtt, avokado, revet ost, rømme og mangosaus i tortillaen eller tacoskjellet.

Ostetacoskjell: Rasp din favorittost og legg i passe hauger på bakepapir. Stek i ca 5 minutter på 180 grader til det er smeltet og bobler litt. (Ikke brenn) så kan du avkjøle litt og bøye de til tacoskjell. Nam!
